One of our favorite places we have gone to learn about healthy plant based eating and cooking is the Olive Branch in Lewiston, Maine. (An all vegan restaurant). They also have free cooking classes once a month and this recipe comes from one of those classes.
Ingredients:
1 1/2 cup ground almonds
1/4 cup lemon juice
1/2 cup water
3 Tbl olive oil
2 cloves are garlic, minced
1 1/4 tsp salt
Directions: Simply place everything in a blender until super creamy and smooth. This can take a few minutes. Stop and scrap down the sides if you need to. Now line a small bowl with 3 layers of cheesecloth. Pour in the contents from the blender. Gather all the sides together and tie at the top so you have a ball. Place in a strainer over a bowl and keep in the fridge for 12 hours to drain or overnight. Place the ball of cheese in a greased baking dish or on a lined baking sheet smooth side up. Bake for 40 minutes or until slightly golden and cracked on top and firm to touch. Let cool before using or transferring to a plate. You can drizzle with flavored oil when ready to serve.
Flavored Oil:
2 Tbl olive oil
1/2 Tbl chopped fresh dill
Directions: Heat oil and dill together until just warmed. Don let simmer. Remove from heat and pour into a small bowl. Let cool.
