We served this as an appetizer at my son’s wedding and it was a hit.
Ingredients:
1 1/2 cup peas
2 cloves of garlic
1/2 cup cashews
1/2 cup vegan parmesan cheese
1/3 cup olive oil
2+ Tbl of lemon juice
Salt and Pepper to taste
baguette
cucumbers
Directions: Put all of the ingredients into a high speed blender and blend until smooth. Chill. This is really good on toasted baguette slices with a cucumber on top.
