Nice summer salad.
Ingredients:
12 cups water
1 1/2 cups quinoa rinsed
3 cucumbers peeled and cut into cubes
1 red onion cut into cubes
1 tomato diced
1 bunch parsley leaves chopped
2 bunches mint chopped
1/2 cup olive oil
1/4 cup red wine vinegar
1 lemon juiced
sea salt and pepper to taste
Directions:
Bring water to boil. Add quinoa, stir once and return to a boil. Cook uncovered over medium heat for 12 minutes. Strain and rinse well with cold water. Transfer quinoa to a large bowl. Add veggies and spices, then add the dressing ingredients and toss well. Serve or chill and serve.
