This mixture could also be used as part of a fruit parfait.
Ingredients:
1/2 cup cooked quinoa
1/2 cup almond meal
1 cup old fashioned oats
1/2 tsp cinnamon
1/2 tsp baking soda
1/3 cup raw almond butter
1/2 cup unsweetened coconut
1 egg replacer
1/3 cup mashed banana
1/2 tsp vanilla
1/2 cup dried fruit
Directions: Combine banana, vanilla, egg replacer, and almond butter in a bowl and mix well. Add remaining ingredients and stir. Place mixture into greased 8×8 pan. Bake at 375 degrees for 20 minutes or until golden brown. Let cool and cut into bars. Store bars in refrigerator.
