This makes a good side dish or you can eat it for a meal mixed with rice.
Ingredients:
Sauce:
2 Tble water
1 Tbl soy sauce
1 Tbl dry sherry
2 tsp brown sugar
2 tsp grated fresh ginger
1 tsp toasted sesame oil
Vegetables
1 Tbl vegetable oil
1 lb asparagus, trimmed and cut on bias into 2 inch lengths
4 ounces Shiitake mushrooms, trimmed and sliced thin
2 scallions, green parts only, sliced on bias
Directions: For the sauce mix all the ingredients together in a bowl. For the vegetables Heat the oil in a skillet over high heat. Add the asparagus and mushrooms and cook, only occasionally until asparagus is spotty brown, 3-4 minutes. Add the sauce and cook stirring once or twice until pan is almost dry and asparagus is crispy tender, 1-2 minutes. Sprinkle with scallions.
