Ingredients:
8 baby bok choy, thinly sliced
1/2 cup shredded carrots
1 Tbl toasted sesame seeds, for garnish
Vinaigrette:
1 garlic clove, finely minced
2 tsps toasted sesame seeds
1 Tbl honey
1 Tbl low sodium soy sauce
3 Tbl rice wine vinegar
1 Tbl toasted sesame oil
3 Tbl vegetable oil
Directions: Whisk together all of the vinaigrette ingredients until well combined. Pour the vinaigrette over the bok choy, and carrot, tossing well until well coated. Divide among 4 plates, piling high. Sprinkle with Tbl sesame seeds.
