Pancakes for breakfast, pancakes for dinner, pancakes are good anytime.
Ingredients:
2 cups whole wheat flour or a mixture of unbleached white and whole wheat flour
3 Tbl sugar
3 Tbl baking powder
1 tsp sea salt
2 cups vanilla soy milk
3 Tbl oil
1/2 cup frozen blueberries
1/2 fresh blueberries
Directions: Combine the first five ingredients in a bowl and sift together. Add the soy milk and oil and mix until smooth. Ladle onto a hot griddle. Add the frozen berries on top and cook for 2 to 3 minutes each side. Serve with fresh blueberries. Chopped walnuts could also be added to the batter before cooking.
