Bok Choy is full of vitamins and minerals.
Ingredients:
4 baby bok Choy, chopped
1/4 cup green onions
1/4 cup toasted sliced almonds
1 small can of drained mandarin oranges
Dressing:
2 Tbl Olive oil
2 Tbl Rice vinegar
1 Tbl soy sauce
1 Tbl sugar
Directions: Mix the dressing ingredients together well. Place the bok choy on two plates. Top with the onions, then the oranges, then the almonds. Drizzle with the dressing.
