This is a very easy recipe from Rachael Ray. It is not exactly a whole plant based food except for the black beans or exactly healthy but it is for times when you need an occasional treat or you need to make a quick dessert for company.
Ingredients:
One box of vegan brownie mix for a 9 x 13 pan or two 8 x 8 boxes
1 1/3 cups water
1 8 oz can black beans, drained and rinsed
non-dairy chocolate chips
chopped nuts of your choice
Directions: Put the water and the beans in a blender until everything is well pureed. Put the brownie mixes into a bowl and add the bean mixture and stir until everything is moistened. Top with nuts and chocolate bits. Bake at 350 degrees until done around 30 minutes and a toothpick comes out of the center clean.
