A friend gave me this recipe after I tried it at her house. I love it but I have cut the sugar and oil down in this recipe to make it healthier. It takes great with homemade pita chips.
Ingredients:
1 can of whole corn, drained
1 can of black beans, drained
1 can of black eyed peas, drained
1 red onion, chopped
1 jar of diced pimentos, drained
1/2 cup hot banana peppers
Dressing:
1/2 cup vinegar
1/4 cup oil
1/4 cup water
1/2 cup sugar
Directions: Whisk all the dressing ingredients together well. Put all the other ingredients in a bowl. Pour the dressing over it and mix well. Let set in the fridge for a 1/2 hour or more before serving.
