This can be used in any dish or soup, replacing the rice and getting an extra serving of vegetable.
Ingredients:
1 head of cauliflower
Coconut oil
Directions: Preheat the oven to 400 degrees and grease the cookie sheet with coconut oil. Break the cauliflower into florets and add to the food processor and pulse until finely minced. Spread the cauliflower “rice” on the cookie sheet and bake for 10 minutes, stirring often. Try to flip the mixture os both sides get browned cooking for about 12 minutes longer.
