Tasty side dish or as a meal.
Ingredients:
1/2 cup raisins
1/2 cup onion, chopped
1/2 cup red pepper, chopped
1/2 cup yellow pepper, chopped
2 tsp olive oil
1 Tbl garlic, chopped
3 cups cooked whole grain couscous
1 cup chickpeas, rinsed
1/4 cup cilantro, chopped
2 tsp lemon zest
1 tsp cinnamon
3/4 tsp turmeric
3/4 tsp salt
Directions: Soak the raisins in 1/2 cup warm water and set aside. In a skillet, cook onions and peppers in oil until tender, add garlic and cook until fragrant. Transfer to a mixing bowl. Add the remaining ingredients and toss well. Serve chilled.
