This is such a quick and delicious recipe to try.
Ingredients:
1 spaghetti squash
1 tsp olive oil
1 roasted red pepper, chopped
1 onion, chopped
1/4 cup of vegetable broth
1 -15 oz can of tomato sauce
1 tsp pepper
2 tsp parsley
2 tsp basil
Directions: Cut the squash in half lengthwise and take out all the seeds. Brush the cut edges with olive oil and put cut side down on a baking sheet. Bake for 1 hr at 350 degrees. While the squash is baking, sauté the onions in the broth until soft and light brown. Add the red pepper, herbs and tomato sauce and simmer 5 minutes. Turn off heat if the squash is not done. When the squash is done take out off oven and scrape the insides with a fork to release the spaghetti noodles. Put the noodles in the tomato pan and return to heat until everything is heated through. Serve
