This recipe is from our friend Teri who is a member of the Seveth Day Adventist Church. Her recipes are always delicious.

Ingredients:

1 cup wheat gluten
1/4 cup nutritional yeast
2 tsp onion soup mix (or try “beef or chicken seasoning, garlic, minced onion,salt)
1/4 cup flour
1 cup water

Directions: Mix the dry ingredients. Mixing quickly, add cold water, adding small amounts of extra water if mixture doesn’t stay together well. Place in plastic bag, shaping into a log. Let set in the refrigerator at least one hour.

Slice into desired size, remembering it will expand at least twice the size when boiled. Boil in broth for 45 minutes, stirring several times.

Broth:
1 quart of water
1 Tbl oil
1/2 cup stewed tomatoes
3 Tbl nutritional yeast
1/4 cup soy sauce or Braggs liquid aminos

Finishing:
Dip the boiled cutlets in breading mixture (with added garlic and onion powder) and fry in a light amount of oil. Place in casserole dish. Top with a small amount of remaining broth. Bake at 350 degrees for 30-40 minutes.
