This recipe I got from my daughter-in-law Hannah and the whole family loves this recipe.
Ingredients:
1 Tbl Olive Oil
1 lb white mushrooms, chopped
1 pinch of salt
1 Tbl non-dairy butter
1/2 cup finely chopped onion
4 minced garlic
1/2 cup quick oats
1/2 cup bread crumbs
1 Tbl nutritional yeast
1/4 cup chopped parsley
1 tsp salt
pepper
1 pinch of cayenne pepper
1 pinch of oregano
1 egg replacement
Directions: In a skillet heat the olive oil over high heat. Add the mushrooms and salt until all the liquid has evaporated. Stir in the Earth Balance into the mushrooms and reduce heat to medium. Cook until golden brown for about 5 minutes. Add the onions and cook for another 5 minutes. Remove from heat and add the garlic until fragrant. Put all that into a bowl and add the oats, nutritional yeast, bread crumbs and spices. Mix until crumbly. Add 1 egg replacement and mix well. Refrigerate overnight. Make into balls and cook on parchment for 12 -15 minutes for 45 minutes. Serve with pasta sauce.
