The gnocchi adds a nice stick to your ribs addition to the beans.
Ingredients:
1 Tbl olive oil
1 medium onion chopped
2 garlic cloves, minced
1 package (16 oz) potato gnocchi
1 can (15oz) white kidney beans, drained and rinsed
1 can (14 1/2) Italian diced tomatoes, undrained
1 package (6 oz) spinach
1/4 tsp pepper
1/2 cup non-dairy cheese
Directions:
Large fry pan, heat oil and add the onions, cook until tender. Add the garlic and the gnocchi, cook and stir for about 5-6 minutes until they are slightly brown. Stir in beans, tomatoes, spinach and pepper. Mix, heat, sprinkle with cheese and serve right out of the pan.
