Broccoli, Broccoli, Broccoli!!!
Ingredients:
1 cup cashews soaked
1/2 nutritional yeast
1/4 lemon juice
5 cups of veggie broth
4 1/2 cups chopped broccoli
1 medium onion chopped
3 cloves of garlic minced
1 tsp basil
1 tsp of salt
peper to taste
Directions:
Place Cashews and 2 cups of the veggie broth in the blender. Blend until smooth. Add the yeast and lemon – blend. Put the remaining broth into a big pot and bring to a boil. Place potatoes, garlic and onion and simmer for 5 minutes. Stir in the broccoli and basil and cook for another 10 minutes. Stir in the cashew mixture, add the salt and pepper to taste, simmer for 5 minutes. Split the recipe into two batches. One batch keep in the pot, the other put in the blender. Blend until smooth. Pour back into the pot. This will give the soup a nice creamy texture.
