Great and easy way to use eggplant as a meal.
1 large eggplant
whole wheat flour
16 oz spaghetti sauce
8 oz non dairy cheese
2 Tbl nutritional yeast
Preheat oven to 350 degrees.
Cut eggplant into thin slices. Dredge eggplant into whole wheat flour. In an 8 1/2 x 11 baking pan begin layering sauce, eggplant, cheese, and nutritional yeast. Begin and end with sauce and cheese. Bake for 35 minutes or until brown and bubbly.
