This is a great snack that goes well with whole grain chips or in a burrito with rice. We got this recipe from our friend Kim.
Ingredients:
1 15 oz can of whole corn, drained and rinsed
1 15 oz can of black eyes peas, drained and rinsed
1 15 oz can of black beans, drained and rinsed
1 red onion chopped
1 jar of diced pimentos, drained
1 jar of chopped jalapeno, drained
1/2 cup hot banana peppers
1/2 cup vinegar
1/4 cup olive oil
1/4 cup water
1 cup sugar
Directions: Put all the beans and vegetables in a bowl. Blend the vinegar, olive oil and sugar together and pour over the bean mixture and mix to blend flavors. I only add half the sugar because this recipes has too much sugar for me.
