I have tried lots of tofu scramble recipes and this is my favorite.
1 box of tofu
1/2 cup of chopped onion
1/2 cup of chopped green pepper
1 cup of fresh mushrooms sliced
3 vegan soy sausage patties
1 Tbl olive oil
Directions: In a big fry pan or wok cook the the onion and green pepper in the oil for 5 minutes. Crumble the tofu on top of them, crumble the sausage and add the mushrooms and stir fry until everything is cooked. About 5 minutes. Sprinkle nutritional yeast on the top of everything and pour on 1/4 cup of soy sauce and stir fry 2-3 more minutes. Serve
