A little different version of Cauliflower Soup
1/2 onion, chopped
2 cloves of garlic minced
2 cups spinach or kale, chopped
2 cups of vegan sausage, chopped
2 cups of potatoes, chopped
4 cups of veggie broth
1 cup of non-dairy mild
2 cups cauliflower, chopped
4 Tbls Parsley
salt and pepper
Add onion to a fry pan and saute, add garlic and simmer just a little, add the spinach or kale to wilt and remove from the pan to a soup pan. Add the sausage to the fry pan and sauté until brown add to the soup pan. Add the veggie broth, milk, parsley, salt and pepper to the soup pan and mix well. Add the potatoes and cauliflower to the soup pan and bring to a boil. Simmer until the potatoes are done. Serve hot. This always taste better the night after.
