A meal by itself and add as a side dish.
Ingredients:
3 cups of cooked rice of choice
8 oz of shelled edamame
1/4 cup dried cranberries
2 Tbl of cilantro
1 Tbl of olive oil
1 Tbl of lemon juice
1/4 tsp pepper flakes (optional)
Directions:
Boil edamame in salt water until tender.
In bowl, add rice, edamame, cranberries, cilantro, lemon juice, pepper flakes and oil. Stir and serve warm. This dish is also great as a cold salad in the heat of the summer.
