This recipe came from my friend Amy and is great in the summer. I cut down the sugar in the recipe because that much sugar in the original recipe is……just not good for us.
Ingredients:
7 cucumbers peeled and sliced
1 onion sliced into thin slices
1 colored pepper, chopped
Dressing:
1/2 cup of vinegar
1 1/2 Tbl oil
1/4 cup sugar
Directions: Put the vegetables in a bowl. Shake the dressing ingredients in a glass jar until well blended. Pour over the vegetables and chill until ready to serve.
