I got this recipe from my Mom and my family can’t get enough of it. It is great for breakfasts and for paninis. It doesn’t take much time to mix it together and is quite easy to make.
Ingredients:
1 Tbl dry active yeast
1/2 cup of molasses or honey
3 cups of hot water
1 1/2 cups oats
1 tsp salt
6 cups flour or more if needed
Directions: In a large bowl put the yeast, then the molasses or honey and the hot water and stir. Make sure it bubbles a little so you know your yeast is activating. Add the oats and salt and stir. Mix in 3 cups of flour and then the next three cups of flour. I end up using my hands at this point. Add a little more flour as needed to get the right dough texture. In another big bowl add a teaspoon or two of olive oil and roll around the sides of the bowl to coat. Put the dough in this bowl. Move the dough around in the bowl a little bit and then flip over and move around the bowl a little bit again to coat it with the olive oil. Cover in plastic and let rise in a warm place. It usually takes 30-45 minutes. Place the dough on a floured board and add kneed in more flour as needed. Divide into half and then half again. Grease two bread pans. Roll each of the divided dough into a ball and put two balls in each pan. Let rise again. When a little above the rim of the bread pan cook at 350 degrees for 40-45 minutes until golden brown. When cool you can break the bread in half where the balls meet and freeze 1/2 of the loaf to use another time if you want.
