Great summer eats on the grill. Refreshing and Delicious!!
1 to 1 1/2 cups of peppers, any color
1 cup of chunked pineapple, fresh or canned
1 cup of zucchini, chopped
1 cup of summer squash, chopped
1 red or sweet onion, chopped
1 to 1 1/2 cup of mushrooms
1 cup cherry tomatoes
If you want potatoes and carrots, I always use 2 cubed potatoes and 2 medium carrots cubed. I boil them until tender for adding them to the other vegetables.
Soak the skewers for at least 1/2 hour
You can do many things to enhance the taste of the veggies.
- skewer the veggies first then spray with olive oil, sprinkle with garlic, salt, pepper and parsley or basil. Cook on the grill, rotating until all sides are brown
- Put all the veggies in a gallon bag, add some Italian Dressing. Shake and let sit for an hour before grilling.
- Make a marinade: 2 Tbls of Italian Seasoning, 2 Tbls of garlic powder, 1/2 oil 3 Tbls lemon juice, salt and pepper. Put all the veggies in a gallon bag, add the marinade. Shake and let sit for an hour. Drain and Grill.
