This is a hearty winter soup. One of the healthiest and cheapest sources of vegetable protein and iron.
Ingredients:
1 cup chopped onion
1/2 cup of dices carrots
3 garlic cloves, minced
3 Tbl of tomato paste
5 cups of water or veggie broth
1 1/2 cups of dried lentils
2 cups of butternut squash
1 tsp thyme
1/4 tsp sea salt
Directions: Combine all ingredients into a crock pot. Cook on low for 5-6 hours.
