A quick meal for lunch
Ingredients:
1/4 avocado
1/2 tsp. lemon juice
2 warm tortillas
2 slices of a tomato
Salt and Pepper
Directions: Mash the avocado and add the lemon. Split and spread on the 2 warm tortillas. Top each with a large slice of tomato or you could cut into chunks and spread over the avocado mixture. Sprinkle with salt and pepper. Tip: you could put a little vegan cheese on top and broil before eating
