This recipe comes from top chef Richard Blais who favors organic produce to make this tasty salad.
Ingredients:
6 ripe peaches, sliced
1/3 cup olive oil
1/3 cup white balsamic vinegar
3 Tbl fresh cilantro, chopped
4 tsp basil
4 tsp sugar
1 Tbl dill weed
9 cups of baby arugula leaves
1/3 cup thinly sliced green onion
3 Tbl toasted sesame seeds
Directions: Toss the peaches with the oil, vinegar, cilantro, basil, sugar, and dill weed in a large bowl.. Let set for 15 minutes. Just before serving, toss arugula, peach mixture and green onion in a large bowl. Sprinkle with sesame seeds.
