These are a quick, easy breakfast idea and a way to use up those ripe bananas.
Ingredients:
2 1/4 cups non-dairy milk
2 tsp apple cider vinegar
2 tsp vanilla extract
1 2/3 cups flour
1/3 cup oat bran, wheat bran or wheat germ
1 tsp baking powder
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/4 cup oil
1 cup mashed bananas (about 3)
3/4 cup walnuts
1 banana sliced
Directions: In a small bowl mix the non-dairy milk, vinegar and vanilla and let set for 10 minutes. Mix together the dry ingredients in a large bowl. After 10 minutes add the oil to the milk mixture and then mix into the flour mixture. Add the bananas and walnuts. Cook on a greased griddle and top with remaining sliced bananas before serving.
