This recipe I found for the American Test Kitchen cookbook which has 250 vegan recipes in it and is a great book to get if you are starting on a plant based diet.
Ingredients:
2 red grapefruits
3 oranges
1 tsp sugar
salt and pepper
1 tsp non-dairy butter
1/2 cup walnuts
3 Tbl extra vegan olive oil
1 small shallot, minced
1 tsp Dijon mustard
4 cups of arugula torn into bite-size pieces
1/2 cup golden raisins
Directions: Cut and peel the grapefruits and oranges. Cut each fruit in half from pole to pole, then slice crosswise into 1/4 inch thick pieces. Transfer the fruit to a bowl , toss with sugar and 1/2 tsp salt and let set for 15 minutes. Melt the butter in a skillet over medium heat. Add the walnuts and 1/2 tsp salt and cook until light brown and fragrant, for 2 to 4 minutes. Remove and put on paper towls. Drain the fruit in a colander set over a bowl reserving 2 tablespoons of juice. Arrange the fruit on a platter and drizzle with oil. Whisk the juice, shallot and mustard together in a medium bowl. Add arugula, 1/3 cup raisins and 1/4 cup walnuts and toss. Arrange the arugula mixture over the fruit and sprinkle with remaining raisins and walnuts. Serve.
