Ingredients:
Grind the 3/4 dry uncooked lentils in a dry blender until very fine
2 cup tomato or V8 juice
ground lentils
1 Tbl soy sauce
1 1/2 tsp onion powder
1/4 tsp salt or less
1/4 tsp Italian seasoning
1/8 tsp garlic powder
Directions: Combine ingredients in a sauce pan and bring to a boil. Reduce heat to low and cook for 15-30 minutes, stirring frequently. The longer the time, the more thoroughly the lentils will be cooked. Don’t worry if it sticks a little. It will scrub off easily when it has been soaked for a while. Remove from the sauce pan and pack into a round can. Let is cool for about 15 minutes and then put into freezer for about 2 hours. Then you can place in the fridge.Chill it thoroughly, or else it will mush instead of slice.
Slice just before serving. You can serve lentil cold cut on while wheat burger buns with mayonnaise, lettuce, tomato, etc. Be creative and enjoy.
