Oh man, this sandwich is good…..
You will need a crusty bread of choice, ready to warm and toast in pan once zucchini is finished.
Pesto Sauce ( We have a great one in Sauces/Gravies/Seasonings)
Hummus Recipe (Side Dish)
To make two sandwiches – Roast 1 red pepper with a little olive oil in the oven 375 degrees for about 15-2o minutes.
While this is being done, slice 1 medium zucchini into long slices. Fry in pan until brown with olive oil, garlic, paprika, salt and pepper.
To make sandwich:
Once the zucchini is finished place on side plate. Take your bread slices (4 for two sandwiches) and place in pan. Toast one side. The bread will soak up the oil and seasoning that is left in the pan.
To make one sandwich – Two slices of bread – Toasted side down. Spread pesto on one slice and hummus on the other. Layer roasted red peppers and zucchini on pesto and cover with other hummus slice of bread and enjoy. Mmmmmm great…
