Ingredients:
1/4 cup raw cashew
3 Tbl water
2 Tbl lemon juice
1 Tbl maple syrup
1 cup firm tofu, patted dry and crumbled
3/4 tsp salt
pinch of garlic chips (optional)
Blend first four ingredients until smooth, add remaining ingredients. Blend for several minutes until velvety smooth and think – chill.
Version 2:
1 Tbl granulated agar or Blaney’s vegetarian gel
1/2 cup water
1/2 cup cashew pieces
3/4 tsp salt
1 1/2 Tbl lemon juice
1/2 pkg tofu, medium/ firm
Directions: Place all the ingredients into blender and blend until smooth. Pour into a mold and refrigerate until set. You can add 1/2 tsp onion powder and chopped green onions to the mixture.
