Ingredients:
1 onion, diced
4 cloves of garlic, minced
3 Tbl olive oil
2 cups broccoli chopped
1 block of extra firm tofu, drained
1 1/2 tsp ginger
1/4 tsp cayenne pepper
3 Tbl arrowroot or cornstarch
1/4 cup soy sauce
1 cup water
Directions: Cut the tofu into 1 inch cubes. In a large skillet saute onions and garlic in olive oil until the onions turn clear, about 3 to 5 minutes. Add the tofu, ginger, cayenne and broccoli to the pan and continue to cook until the broccoli is done, another 6 to 8 minutes.
In a separate small bowl mix the arrowroot, soy sauce and water. Then add this mixture to the broccoli and tofu. Cook until the sauce thickens. Serve over rice.
