Cauliflower makes for a great filler for sandwiches.
1 head cauliflower, thinly sliced
3 Tbl curry powder
1 15-oz can of chickpeas, rinsed and drained
1 cup parsley leaves
1 small red onion, sliced
1/2 cup fresh mint leaves
1/2 cup golden raisins
2 Tbl white vinegar
2 tsp honey
3 pita breads, halved.
Directions: Preheat oven to 400 degrees. Toss the cauliflower with the curry powder. spread on a baking sheet and roast for 10 minutes. Transfer to a large bowl and toss with the chickpeas, parsley, onion, mint, raisins, vinegar and honey. Fill each pita half with 1 cup of cauliflower mixture.
