1 lb carrots
1/2 tsp cinnamon
1/4 tsp nutmeg
2 Tbl orange juice
Directions: Preheat the oven to 250 degrees. Slice the carrots with a mandolin to get even slices and at a diagonal. Use the thinnest setting. Toss the carrots with spices and juice and arrange on a baking tray. Bake for 45 minutes until carrots are crisp.
