This recipe we got at a wellness fair and really liked it.
1 cup quinoa
2 cups water
1 red pepper, cut fine
1 carrot, cut fine
6 scallions, minced
1 cup snow pea pods cut in halve
2 Tbl cilantro
1/2 cup toasted pecans, chopped
1/2 cup raisins or dried cranberries
1 clove of garlic, minced
1/2 cup olive oil
2 tsp ground cumin
4 Tbl honey
2 Tbl fresh lemon juice
5 Tbl rice vinegar
Directions: Bring water to a boil. Rinse the quinoa several times in cold water. Add the quinoa and simmer at lower temperature for 20 minutes. Cover, take off the heat and let stand for 5 minutes. Place in a large bowl to cool. Add all the vegetables to the quinoa. From the garlic ingredients down mix up the dressing and pour over quinoa. Chill until ready to serve. Can serve on bed of lettuce.
