This is fast and easy and makes a great treat when you need something sweet.
1 package dairy-free semi-sweet chocolate chips
2 Tbl pure maple syrup
2 tsp pure vanilla
1 cup cashew milk or other non-dairy milk
1 box of firm silken tofu
Directions: In a high speed blender add milk, vanilla, tofu and milk. In microwave or double boiler melt chocolate bits until smooth. Add to blender and blend until everything is blended and smooth. Pour into 4 oz jelly jars and chill. Serve with fresh raspberries on top, walnuts or other fresh fruit.
