This has been the best meatloaf recipe we have found. It comes from Rip Esselsyn of Engine 2 diet.
Ingredients:
1 onion, minced
1 tsp garlic, minced
1 red pepper, chopped
4 oz mushrooms
1 can kidney beans
1 can cannellini beans ( I used black eyed peas)
1 cup old fashion oats
1/2 cup nutritional yeast
2 tsp tamari
1/2 tsp black pepper
1 tsp dried rosemary
1/2 tsp onion powder
1/2 tsp dry mustard
1 tsp ground sage
1 tsp paprika
1/2 BBQ sauce
Directions: Cook the onions in a fry pan until soft. Add the garlic, red pepper, and mushrooms. Cook for an additional 5-8 minutes. In a large bowl mix the cooked mixture with the remaining ingredients except the BBQ sauce. Mash with your hands until mixed well. The mixture will be sticky. Put a BBQ sauce in the bottom of a loaf pan. Add mixture on top. You can put more BBQ sauce or ketchup on the top. Bake for 1 hour. Let set for 10 minutes before cutting.
NOTE: I made mine in muffin tins and cooked it for 30 minutes. It made 12 muffin size loafs and the freeze really well.
