This muffin recipe comes from the Plant Pure Nation cookbook. It’s very good and the great thing about it is it uses no oil.
1 tbsp flax meal
3 tbsp warm water
3/4 cup nondairy milk
1/2 cup applesauce
3 tbsp agave nectar
2 cups whole wheat pastry flour
1 tbsp baking powder
1/4 tsp sea salt
1 cup blueberries (fresh or frozen)
Directions: Combine the flax meal and warm water in a small bowl and set aside. In a separate large bowl, mix the mild, applesauce, and agave. When the flax meal and water has thickened, add it to the milk mixture and stir to combine. Stir in the flour, baking powder, and salt all at once. Only mix until the flour is moistened (batter will be lumpy). Gently fold in the blueberries. divide the batter among a muffin tin. Bake at 400 degrees for 15-20 minutes, or until golden brown.
Variations: Add 1/4 tsp of cinnamon. Also substitute cranberries orange, and walnuts for the blueberries.
