Here is an easy recipe for vegan sausage from my friend Beverly from the CHIP program. I have added a few extra spices and changed the quick oats to oat bran because I didn’t have any quick oats. I was a little short on oat bran so I threw in some old fashion oats to make up the rest. So you can use quick oats, old fashion oats, oat bran or a mixture of any of them and it works.
Ingredients:
2 cups water
3 Tbl Braggs Amino Acids
2 Tbl oil
2 Tbl maple syrup
2 tsp sage
1 tsp garlic powder
1/2 tsp Italian seasonings
2 Tbl minced onion flakes
1/2 tsp rosemary
1/2 tsp thyme
1/2 tsp crushed red pepper
Combine water and the seasonings in a saucepan and bring to a boil. Add 2 cups of quick oats and cook for 1-5 minutes until water is absorbed and mixture thickens up. Scoop onto a cookie sheet and flatten out. Bake at 350 degrees for 10-15 minutes each side.
I use these to make breakfast sandwiches with english muffins, tofu egg and vegan cheese. Sometimes I will crumble up the mixture into small pieces and bake it until done so I can mix it into tofu scramble or use in a sausage gravy.
