These are sweet and delicious compared to regular fries.
2 1/2 lb of parsnips, peeled and cut into strips
1 Tbl finely chopped fresh rosemary
1 large garlic clove, minced
3 Tbl olive oil
Salt and pepper
1/2 tsp ground cumin
Directions: Mix the parsnips, rosemary, garlic and oil on a large baking sheet. Season with salt and pepper and toss to coat. Roast for 10 minutes, turn and roast another 10-15 minutes. Sprinkle with cumin.
