Lisa is an integrated health coach. She also works in a non-profit social service agency as the office manager and grants monitor. She seeks to help others lead a healthy lifestyle, to help save the environment and change the way we think about medicine, one person at a time.

How long have you been eating plant-based? For 2 years.

What made you decide to go plant-based? I started going plant-based due to health concerns but then after researching it more and understanding it more, it makes me continue on this path.

What are your go to foods for breakfast, lunch and dinner?
For breakfast I like a green smoothie and oatmeal on the weekends. For lunches I eat salads with slivered almonds and chickpeas. For dinner I love black beans and rice, stir-fries. I try to experiment with different grains. I also love avocado on sprouted bread with raw fermented sauerkraut.
What did you find to be the biggest challenge to becoming plant-based?
Craving carbs! I love pasta and bread so I have changed over to whole-grain bread, rice pasta and quinoa.
What Are the benefits that going plant-based have done for you?
I feel a lot healthier. I get sick less often. I have had no asthma problems, no migraines and my allergies are gone. I feel full of vitality and energy.
Do you have a recipe, favorite cookbook or tip to share? As long as we are making small changes towards a whole food plant-based lifestyle it is a step in the right direction. It’s hard to go from A to Z quickly.
