This recipe was brought to our last potluck by our Friend Sheryl. It is salt, oil and sugar free and still delicious!
Ingredients:
2 Tbl ground flax seed mixed with 6 Tbl water
2 cups whole wheat flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
4 bananas (2 cups mashed bananas)
6 dates finely diced
1/2 tsp vanilla
1/2 cup walnuts, smashed (optional)
Directions: : Preheat oven to 350 degrees, Mix ground flax seed and water and set aside. Mash bananas well. Add vanilla. Add diced dates and mix well, breaking it up as you mix. Add walnuts, flax egg and try ingredients to the banana/date mixture. Mix together, but don’t over mix (may seem dry but that’s ok!). Pour into parchment lined bread pain and bake for 1 hour at 350 degrees.
