From the friends of Norridgewock Church
2 cup cashews
4 cup water
2 Tbl vanilla or maple extract
1/2 tsp salt
1/2 Tbl pitted dates
Directions: Simmer dates in 2 cups of the water to soften. Blend cashews with the remaining wear until very creamy, then add the softened dates, and the remaining ingredients blending in well. Soak bread slices briefly in batter, covering both sides. Arrange slices on an oiled cookie sheet and bake at 375 degrees fro 15-20 minutes on each side or until golden brown. Or cook quickly on a hot griddle, once oiled. Delicious served with maple syrup.
