4 heads of baby bok choy
1 peeled apple cut into matchsticks
2 large shredded carrots
3 Tbl fresh lemon juice
1 Tbl oil
1 tsp finely grated fresh ginger
Directions: Cut the bok choy in half lengthwise. Cut into thin strips. In a bowl mix the apple, carrots, lemon juice, oil and ginger. Add the bok choy and season with salt and pepper. Toss and serve.
