Cooking leeks slow brings out their sweet flavor.
Ingredients:
1 lb of leeks, trimmed of the dark green leaves and keeping the white and light green
2 Tbl non-dairy butter
Salt and pepper
Thyme
Directions: Trim and wash the leeks. Slice them diagonally and chill in the refrigerator until ready to cook. In a large saucepan melt the butter. Add the leeks and seasonings and stir to coat with butter. Turn heat to low, cover and continue to cook on low for 15 minutes stirring half way through until they are tender. Sprinkle with thyme at the end before serving.
