Ingredients:
5 cremini mushrooms, minced
5 shitake mushrooms, minced
3 Tbl canola oil
1/4 cup unbleached all-purpose flour
2 Tbl nutritional yeast
1/2 tsp black pepper
1/4 tsp sea salt
1 1/2 cup vegetable stock
Directions: Saute the mushrooms in oil in a medium saucepan over medium heat for 2 minutes.Stir in all the flour, nutritional yeast, pepper, and salt, and cook for additional minute, stirring constantly.Whisk in the stock 1/4 cup at a time, until it reaches your desired thickness. If you want a smoother gravy, blend the gravy in a food processor or blender.
