8 medium beets, peeled and cut into chunks
3 medium sweet potatoes, cut into chunks
1 large sweet onion, chopped
2 1/2 tsp olive oil, divided
1 tsp garlic powder
1 tsp salt
1 tsp pepper
1 tsp sugar
Directions: Preheat oven to 400 degrees. In a bowl toss the beets with 1/2 Tbl olive oil to coat and spread on a single layer on a baking sheet. Mix the remaining oil with the rest of the ingredients in a bag. Seal the bag and shake to coat the vegetable. Bake the beets for 15 minutes in the oven. Mix the potatoes in the bag with the beets and continue baking for 45 minutes, stirring after 20 minutes , until all the vegetables are tender.
