Leeks are used a lot in Europe, more so than here and are part of the onion and garlic family. It also shares many of the nutritional benefits
Ingredients:
2 leeks finely chopped
4 carrots, finely chopped
1/2 cup veggie broth
2 Tbl butter
1 Tbl sugar
1/2 tsp thyme
1/2 tsp salt
1/8 tsp pepper
Directions: Put all the ingredients into a large sauce pan and bring to a boil. Reduce heat and simmer for 15 minutes. Stir and cook until lightly browned about 2-3 more minutes. You can also put this mixture into phyllo dough and bake for 20 minutes at 400 degrees to have little strudels.
